Responsibilities:
- Achieve Food Safety standards as detailed in Quality Policy Statement
- Ensuring Quality/Food Safety of all products produced.
- Training of personnel in CP and CCP related activities to specific SOP’s eg. Goods-In, Storage, Labelling, Metal Detection, Dispatch, Distribution, in conjunction with the production and distribution department
- On-line process monitoring in all areas in co-operation with employees
- Training of employees in SOP’s specific to the HACCP management plan
- Goods Received - documentation, labelling, transfer
- Documentation completion/sign-off from all areas
- Weight control, Quality control, Metal Detection, Hot & Cold Smoking CCP’s Process control
- Process monitoring, temperature control, traceability, labelling on all lines
- Process controls - intake, storage, preparation, processing/sausage filling, traceability, chill records, storage records, pack-off records, metal detection records, Hot smoking graphs, cooling graphs, labelling records.
- Monitor the requirements of the Quality Management System.
- Ensuring that all process staff are aware of individual product quality standards.
- Working with other team members to prepare for customer and 3rd party visits and audits.
- Final checks on packaging and labelling of product.
- Ensure all specification requirements for each customer are met daily.
- Ensure compliance to requirements for continued SFPA registration, BRC
- Help to maintain registration status to recognised accreditation bodies
- Help to maintain compliance to existing and proposed legislation in regard to labelling, traceability etc.
